The philosophy of 2B FermControl is based on a simple but powerful principle: “The Power of Nature” – using the power of nature instead of working against it.
ViniFix™ was developed precisely for this purpose: to help wines achieve clarity, purity and sensory harmony in a gentle, organic way.Instead of aggressive chemicals, ViniFix relies on the natural effect of yeast cell walls, bentonite, chitosan, copper citrate and ascorbic acid – intelligently combined to gently neutralize off-flavour notes such as reduction, bumps, smoke or mushroom tones.
This preserves the essentials: the natural character of the wine, the fruit, the origin, the winemaker’s signature.
ViniFix™ - Multifunctional, gentle and full of effect
In practice, the strength of ViniFix is particularly evident after primary fermentation – right now, in late fall, when the young wines are resting and it is time to prepare them for the next phase: malolactic fermentation.
ViniFix plays a dual role here:
- Sensory clarification: Before the start of the BSA, ViniFix removes disruptive “off-flavor” notes, such as reduction or phenol defects, which could impair the course of the second fermentation.
- Optimal conditions for active di-cultures: By stabilizing the young wine, ViniFix creates a balanced environment for the targeted addition of active di-cultures – the biological acidity can be broken down naturally, cleanly and in a controlled manner.
The result: a harmonious, lively wine, free from extraneous tones – entirely in the spirit of natural winemaking.
