Frequently asked questions about VitiFerm™ BIO Paradisi

VitiFerm™ BIO Paradisi is ideal for fruity rosé and aromatic white wines. It was specifically developed for an expressive, fresh style and produces intense aromas such as pink grapefruit and blood orange peel.

Yes, VitiFerm™ BIO Paradisi is certified in accordance with EU Organic Regulation 2018/848. It is produced on a purely organic basis – without synthetic emulsifiers, preservatives or genetic engineering processes.

The recommended fermentation temperature is between 16 and 20 °C. The yeast tolerates alcohol contents of up to 14% by volume and works reliably in musts with a turbidity of over 80 NTU. For stable fermentation, the NOPA value should be at least 160 ppm.

Due to its very low SO₂ formation, VitiFerm™ BIO Paradisi is particularly suitable for the subsequent BSA. The combination with the BSA starter cultures MaloBacti™ HF2, HF2 DI, CN1 or AF3 is recommended.

The standard dosage is 20-40 g/hL, under difficult conditions 30-40 g/hL. It is important to activate the yeast before use – it must not simply be rehydrated. Detailed instructions for activation are included with the product.

FermControl™ BIO ensures a complete nutrient supply on an organic basis and completely replaces classic additives such as DAP or thiamine. This enables safe fermentation management – especially when the nitrogen content in the must is low. The supplement is added in two steps: two days after yeast addition and again after two thirds of the fermentation.
