VitiFerm™ BIO Pinot Alba is a strain (Saccharomyces cerevisiae species) that has been carefully selected from a biodynamic habitat. During the selection process, particular emphasis was placed on defining a strain with special characteristics that enables a rapid polysaccharide release from the yeast interior during white wine fermentation and thus emphasizes a “battonâge characteristic”. The yeast strain was selected on the basis of its proven natural physiological properties for the production of terroir-accentuated and varietal wines.

VitiFerm™ BIO yeasts are consistently organically produced, from selection to production, and therefore fully comply with EU Regulation 2018/848 and Implementing Regulation 889/2008. They are free from synthetic emulsifiers and stabilizers.

VitiFerm™ BIO Pinot Alba is a certified organic dry pure yeast strain(Saccharomyces cerevisiae), specially developed for Pinot Blanc and Pinot Gris, Chardonnay and mild Spätlese wines.

It promotes a yellow-fleshed aroma with pronounced minerality and gives the wine a creamy, harmonious texture through increased polysaccharide release – similar to a Battonâge.

The yeast is alcohol-tolerant, low in nutrients and produces only small amounts of SO₂, making it ideal for subsequent malolactic fermentation.

Yes, it is completely organically produced and complies with EU regulations 2018/848 and 889/2008. It is free from synthetic emulsifiers and stabilizers.

Like all 2B yeasts, it must be activated, not simply rehydrated, to ensure maximum fermentation performance.
