VitiFerm™ BIO yeasts are consistently organically produced, from selection to production, and therefore fully comply with EU Regulation 2018/848 and Implementing Regulation 889/2008. They are free from synthetic emulsifiers and stabilizers. It is therefore important to ensure that 2B yeasts are ACTIVATED and not rehydrated in order to function properly!

VitiFerm™ BIO Sauvage is a wild dry yeast of the species Saccharomyces uvarum, selected from an organic habitat of a top vineyard in Hermanus (South Africa). It is suitable for the production of individual white and red wines with a “spontaneous” aroma and clear, clean fermentation.
It offers the aroma spectrum of a clean spontaneous fermentation with complex, fruity notes and a finely spiced structure – ideal for terroir-driven wines with a natural character.
The yeast has a high alcohol tolerance, low nutrient requirements and low SO₂ production, which makes it particularly compatible with malolactic fermentation (BSA).
Yes, the yeast is produced completely organically and complies with EU regulations 2018/848 and 889/2008.
Like all 2B yeasts, it must be activated, not simply rehydrated. This ensures optimum fermentation performance.
It is ideal for all red and white wines that need to develop an individual, natural aroma with an elegant structure.
